Yamada Nishiki (Miki City)
Each grain, polished to a translucent perfection, serves as the starting point for delicious sake. Miki City is an indispensable land for sake brewing, boasting the number one production volume in Japan for Yamada Nishiki, often called the king of sake rice. Yamada Nishiki was born through a strong bond with Nada sake brewers between the late Taisho and early Showa eras. The grains are large with a clearly defined shinpaku (starchy core), producing clear sake without any impurities. Parts of Miki City and Kato City are designated as the highest-ranking "Special A" districts, and this rice has been so highly prized that it is said, "If you want to buy sake rice, buy the land." Yamada Nishiki from Miki is relied upon by breweries across Japan, including those in Nada. Behind every glass of fine sake lies the rice grown in these terraced rice fields.
