Tanba Dainagon Azuki Beans

When you put a plump, cooked bean in your mouth, the skin is soft and the inside is fluffy. A rich flavor and elegant sweetness spread through your palate. Tanba Dainagon Azuki beans are considered the 'pinnacle of azuki beans' and are an indispensable masterpiece for making Japanese sweets. The grains are large and have a vibrant, deep red, barrel-like shape. Because the skins are thin yet resistant to splitting during cooking, it is said that the name was inspired by a 'Dainagon (High Court Official) who could draw his sword in court and still avoid ritual suicide (seppuku) without the skin breaking.' Cultivated since the Heian period, they have a history of being presented to the Imperial Court and the Shogunate, but today they are a rare variety with very little domestic production. They make for an elegant sweet paste in Zenzai (sweet red bean soup) where the shape of the beans is beautifully preserved. A treasure of Tanba that confectionery shops in Kyoto and Kobe place their trust in.
