Amaimo (Amagasaki Traditional Vegetable)
When steamed and eaten, it offers a dense, rich sweetness. This 'phantom' sweet potato, which had once disappeared, was brought back to life by the hands of local people. This is Amagasaki's traditional vegetable, 'Amaimo.' Born in Amagasaki toward the end of the Edo period, Amaimo was famous for its long shape and intense sweetness, serving as a luxury item transported at high prices to high-end restaurants in Kyoto and Osaka. However, it vanished due to factors such as salt damage from major typhoons during the Showa era. Driven by citizens wishing to 'taste that flavor once more,' it was revived in 2003. Grown as a symbol of a city that overcame pollution, it has now even evolved into products like sweet potato shochu. A single lineage of flavor that was nearly lost, reconnected through the power of the community. Please come and taste the dense, sweet Amaimo.
