Awaji Island Sea Bream
When you pierce the flesh with chopsticks, it offers a plump, bouncy elasticity. As a single slice reaches your mouth, a firm and elegant sweetness spreads across your palate. The pride of Awaji Island's sea bream lies in its firm texture, developed by training in seas with swift tidal currents. Awaji Island is surrounded by three straits: Naruto, Akashi, and Kitan. Sea bream that grows up eating plenty of shrimp and crab amidst these intense currents possesses firm flesh and a magnificent balance of fat and umami.
