Awaji Island 3-Year Tiger Pufferfish
On Awaji Island, the king of winter delicacies is nurtured for an extra year. While farmed tiger pufferfish are usually harvested after two years, the 'Awashi Island 3-Year Tiger Pufferfish' raised in Fukura Bay, Minami-Awaji City, stays in the water for one additional year. This allows them to grow to a magnificent size of 1.2 to 1.8 kg—nearly double the weight of 2-year-old fish—and results in plump, rich milt. Fukura Bay has the lowest water temperature among the local farming sites and is located right next to the Naruto Strait, one of the world's three major tidal currents. Being buffeted by these fast-moving currents causes the meat to become firm and tight. As a result, the texture is substantial, and every bite releases an intense burst of umami and richness. Whether served as translucent sashimi (usu-zukuri), in a piping hot hot pot (tecchiri), or as fragrant deep-fried pieces (karaage)—it is a luxury exclusive to the season starting in November.
