Fresh Raw Shirasu from Awaji Island
In the spring, Awaji Island awaits a sparkling single bowl. Available only after the season opens in late April, these special raw shirasu are exclusively landed at Iwaya Port, facing the Akashi Strait. Among all the whitebait landed, the highest quality "kireimon" (beautiful ones) accounts for only a few percent; these are flash-frozen within minutes of being caught to preserve their bouncy texture. Placed atop steaming hot rice, the raw shirasu is subtly sweet with a gentle aroma of the sea. As you chew, the umami spreads, and when mixed with a perfectly compatible raw egg, it melts in your mouth. Served from early summer to late autumn, this flavor—where freshness is everything—is best enjoyed right here on the island.
