Iwatsu Negi (Iwatsu Green Onion)

In Asago City, there exists a "phantom green onion" that can only be encountered during the winter. Iwatsu Negi is an intermediate variety that takes the best of both white deep-rooted onions and green leafy onions. Its most significant feature is that the entire plant, from the green tips to the white roots, can be eaten. Its roots trace back to the Edo period, when seeds were brought from Kyoto as a winter vegetable for the workers at the Ikuno Silver Mine. It is considered one of the "Three Great Green Onions of Japan," alongside varieties like Shinjita Negi. Growing under conditions of large temperature fluctuations between day and night and being exposed to deep frost and snow, the onion becomes thick-fleshed yet melt-in-your-mouth tender and incredibly sweet. When simmered in a hot pot, it releases juicy sweetness; when grilled, it becomes creamy. Available only from late November to early spring, it is a true winter delicacy.
