Tajima Beef (Yabu)

Yabu City, the home of Tajima beef. In this land surrounded by steep mountains and valleys, the cattle's lineage has been preserved without mixing in outside blood. This purity is precisely why it is considered the origin of Japanese Wagyu. Yabu City is home to the only livestock market in Tajima, where calves gather before heading out to various regions. It is said that most of the Black Wagyu across the country carry Tajima blood, and Kobe Beef, Matsusaka Beef, and Omi Beef were also raised using this Tajima beef as their foundation (motoushi). In 2015, it was registered under the Geographical Indication (GI) protection system. Fine marbling and a rich umami flavor in the lean meat that expands with every bite. This is a truly reliable breed, raised in the land that continues to protect the roots of Wagyu.
