Peron-yaki
In Aioi, a town known for shipbuilding, there is a deep-rooted culture of enjoying flour-based dishes cooked sizzling on iron griddles. Its name comes from the 'Peron Festival' held in early summer, which is a symbol of Aioi. This festival features dragon boat racing introduced by people from Nagasaki who worked in the shipyards during the Taisho era; it is an event that heats up the entire town with the resounding sounds of Don-Den-Jan drums and gongs. This dish captures the essence of life in Aioi, reminiscent of how workers would gather around a hot griddle after finishing their shifts. The edges of the batter are perfectly toasted and fragrant, while the inside remains fluffy. When the aroma of sweet and savory sauce caramelizing on the griddle rises, it is enough to make anyone's stomach growl. Eating it freshly made, scooped up with a spatula alongside the locals—that is the most delicious way to enjoy it in Aioi.
