Aioi Oysters
Winter in Aioi Bay begins with plump, fattened oysters. Aioi Bay, enriched by the mountain nutrients carried by two rivers—the Ibo and Chigusa—provides the ultimate dining table for oysters. Because they grow rapidly within about six months of seeding, they are known as 'one-year oysters,' with their shells packed with pure white meat. The texture of this meat is incredibly plump. Since they grow while absorbing plenty of nutrients, a wonderful feature is that they are resistant to shrinking when heated, allowing you to enjoy them at their full size. Once in your mouth, a rich sweetness and the flavor of the sea spread intensely. Whether it's grilled in the shell on a net, enjoyed as smooth raw oysters, or served as steaming steamed oysters—the variety of ways to eat them is a specialty of Aioi, where direct sales from producers are flourishing. It is a true delicacy that can only be encountered in winter.
