When thinking of a steaming feast in the winter of Tanba-Sasayama, this is undoubtedly it. Thinly sliced wild boar is arranged in a circle on a large platter to resemble the petals of a peony flower—it has been called 'Botan Nabe' (Peony Hot Pot) because of this gorgeous presentation. The stars of the preparation are the wild boar meat and a rich, miso-based broth. A deep miso flavor accented with sansho pepper gently envelops the sweetness of the boar's fat. As the wild boar simmers, it becomes melt-in-your-mouth tender, and its savory umami seeps into the broth. The fat is not heavy; rather, the aftertaste is quite elegant. Scoop up plenty of Chinese cabbage and mushrooms soaked in the miso broth and enjoy them while they are piping hot. On cold days, this single pot warms you to your very core.
