Light Soy Sauce (Usukuchi Shoyu)
The taste that heralds autumn in Tanba-Sasayama is the highly aromatic Tanba Matsutake mushroom. When you gently split the cap, the rich aroma rising up makes you take an involuntary deep breath. When dipped in the broth of Dobin Mushi (teapot soup) or grilled, it becomes savory; when made into Matsutake rice, the entire room is enveloped in its scent. The climate unique to a basin surrounded by mountains on all sides, combined with well-drained red pine forests, nurtures these exquisite matsutake mushrooms that are both fragrant and firm. In recent years, due to damage from pine wilt disease and other factors, their numbers have decreased, making them rare and positioning them as one of the highest-grade luxury items in the market. A gift from the mountains that can only be tasted during the short autumn season. Please enjoy the rich aroma that spreads with every bite through dishes like Dobin Mushi or grilled Matsutake.
