Tajima Beef

When gently lifted with chopsticks, the fine marbling glistens with a melt-in-your-mouth quality. The moment it touches your palate, the fat dissolves instantly, leaving behind only the intense, concentrated umami of the lean meat—the true deliciousness of Tajima Beef lies in this clear, lingering aftertaste. In the land surrounded by the rugged mountains and valleys of Tajima, cattle have been raised without any outside bloodlines. Because of this pure lineage, Tajima cattle have been chosen as the foundation stock (motoshi) for Kobe Beef, Matsusaka Beef, and Omi Beef. It is even said that most Japanese Black Wagyu across the country carry Tajima blood, making it truly the birthplace of Wagyu. Whether in sukiyaki or as a steak, its sweetness makes you realize 'this is different' from the very first bite. This dish is a direct reflection of the time spent nurturing the cattle into flavor.
