Izushi Soba (Izushi Zara-soba)

Each small white plate holds a single bite of glossy soba noodles. The sight of multiple Izushi-yaki ceramic plates lined up on the table is enough to make your heart dance. As you slurp each plate while varying the condiments—using egg, grated yam, green onions, or grated radish—your chopsticks simply won't stop until the very end. It is said that soba took root in Izushi in 1706 (the third year of the Hoei era) during the Edo period, when a feudal lord transferred from Ueda, Shinshu, brought skilled soba craftsmen with him. Eventually, as they served portions on small plates at food stalls, it evolved into the current 'zara-soba' style. The creed of Izushi Soba remains: freshly ground, freshly kneaded, and freshly boiled. Enjoy multiple servings of fragrant, handmade soba on white porcelain plates. The joy of stacking up the empty plates is an experience unique to this place.
