Akashi Octopus
When you bite into a boiled octopus, a firm chewiness is followed by a spreading sweetness that intensifies with every chew. This elasticity is the hallmark of Akashi Octopus. These octopuses grow in the fast-moving currents around the Akashi Strait. The seabed is rich in prey like crabs and shrimp, featuring a complex terrain of rocky and sandy areas. Because they must exert great effort to avoid being swept away by the swift tides, they grow with thick, short legs and muscular, firm flesh. It is said they are so strong they can even 'stand and walk on land.' Octopus fishing has been practiced since the Yayoi period, and by the Edo period, this area was already a well-known producer nationwide. From Akashiyaki to takomeshi and sashimi, it is a true blessing from the sea of Akashi that reveals more flavor the more you savor it.
