Akashi Sea Bream
When picked up with chopsticks, it has a plump, bouncy elasticity. As you take a bite, its elegant sweetness and firm texture reveal exactly how it differs from other types of sea bream. Akashi Sea Bream is red sea bream raised in the Akashi Strait, famous for its rapid tidal currents. Because the fish must continue swimming against the intense currents, the flesh becomes tightly firm, resulting in a refined umami flavor that is not overly oily. Its brand prestige is so high that it is sometimes hailed as the best sea bream in Japan. Those caught particularly in the spring are called 'Sakura-dai' (Cherry Blossom Sea Bream) due to their beautiful pink color reminiscent of cherry blossoms, and are cherished as auspicious symbols. Whether served as sashimi, in rice dishes, or salt-grilled, it is a true delicacy of the sea that Akashi is proud to offer.
