Take a bite of the soft, fluffy batter after soaking it in warm dashi broth. After a melting texture, a plump piece of octopus reveals itself from within. A local specialty of Akashi, this dish features octopus baked into a batter rich with eggs. Locally, it has been called 'Tamagoyaki' since ancient times. One theory suggests it originated from combining leftover egg yolks from the production of 'Akashi-tama' (decorative beads), which was once a thriving industry in Akashi, with local octopus. It is even said that Osaka's Takoyaki was inspired by this Akashiyaki. Dip one into the dashi and enjoy it as it gently melts in your mouth. The gentle flavor is so addictive you can eat them one after another.
