Ekisoba
Yellow Chinese-style noodles paired with a Japanese-style dashi broth. Although it seems like a strange combination at first glance, one sip brings a sense of relief that makes it impossible to stop eating. It was created by Maneki Foods, which handles ekiben (station bento) at Himeji Station. During the post-war era of scarcity, wheat flour was difficult to obtain, so they conducted numerous trials using konjac powder and buckwheat flour, but the noodles tended to get soggy too easily. Through persistent ingenuity, they eventually arrived at a long-lasting alkaline Chinese-style noodle. In 1949, sales began on the platforms of Himeji Station under the name "Ekisoba." For over 70 years, this bowl has accompanied people departing from the station. When you arrive at Himeji, please be sure to enjoy it right on the platform.
