Himeji Oden

A single drop of soy sauce with grated ginger on a radish soaked in dashi broth. The sharp aroma rises, giving the usual oden a refreshing kick. Himeji Oden is characterized by eating it with ginger soy sauce poured or dipped over it. It is believed that this unique way of eating stems from Himeji originally being a production area for both ginger and soy sauce. Locally, this was a very common way to eat it and long lacked a specific name, but in 2006, a regional revitalization group named it "Himeji Oden," and it has spread along with its promotion. In 2012, it also obtained a regional collective trademark. Today, it is a proud flavor of Himeji, appearing in many shops throughout the city and even in school lunches.
