Dechi Yokan is a type of steamed yokan that spread throughout Shiga Prefecture alongside the culture of the Omi merchants. It is characterized by mixing flour into the bean paste before steaming and wrapping it in bamboo skin, which acts as a natural preservative. The name is said to originate from the fact that it was a souvenir brought home by 'dechi' (apprentice) merchants returning from their places of service. Its hallmark is a light sweetness and a chewy texture. The simple appearance, wrapped in bamboo skin, evokes a sense of nostalgia.
