It is said that this morning mist gently protects the buckwheat, which is sensitive to frost. The volcanic ash soil is rich in minerals and provides excellent drainage, cultivating high-quality, aromatic soba. During the Edo period, it was transported from Shinshu to Edo, gaining fame as 'Kirishita Soba.'
