Sasa-zushi

A single bite featuring colorful mountain delicacies and vinegared rice beautifully presented atop vibrant green bamboo leaves—this is Sasa-zushi, a traditional food passed down in Northern Shinano, including areas like Iiyama. It is said to have originated when Uesugi Kenshin's army, crossing the Shinetsu border during the Battle of Kawanakajima, was served this dish; in Iiyama, it is also known as 'Kenshin Sushi.' Bamboo leaves possess antibacterial and preservative properties, making them highly valued for storing food. The vinegared rice is topped with bounties from the mountains, such as fernbrake, bamboo shoots, shiitake mushrooms, and walnuts, accented by thin strips of omelet and red ginger. The refreshing aroma of the bamboo leaves subtly infuses the vinegared rice, making every bite a delightful experience of textures. Designated as an Intangible Folk Cultural Property of Nagano Prefecture, this dish is a true essence of the spirit of Northern Shinano.
