As you take a single pinch into your mouth, the aroma of the chestnut itself unfolds. It is a Japanese confection loved in Obuse and Nakatsugawa, available only in autumn. The making process is quite simple. Steamed chestnuts are passed through a sieve, mixed with sugar, and kneaded before being hand-shaped into small pouches using a cloth. With almost no additives, artisans shape each piece within seconds to ensure the chestnut flavor is preserved. It is a 'namagashi' (fresh confection) made without preservatives, produced only from around September when new chestnuts ripen through the winter. With a moist, melt-in-your-mouth texture and subtle sweetness, pairing it with a cup of tea creates a luxurious moment, as if you are tasting the very essence of the autumn harvest.
