Kiso no Gohei Mochi
Flat rice cakes skewered on sticks, releasing fragrant steam as they grill over charcoal—this is a familiar sight in the villages of Kiso. Flattened, semi-mashed non-glutinous rice is spread onto wooden skewers and generously coated with walnut miso sauce made from crushed walnuts, a specialty of Shinshu, before being grilled. The dough retains a pleasant texture of rice grains, which clings to the savory-sweet miso and the richness of the walnuts; the exterior becomes toasted while the inside remains chewy. It is said that cypress skewers have been used in the Kiso region since ancient times, and as they grill, a subtle woody aroma infuses the snack. The savory scent of the caramelizing sauce stimulates the appetite even from afar. Taking a bite while blowing to cool it down, you find a flavor that is simple yet addictive—a true taste of Shinshu, born from the ingredients of the mountain valleys.
