Oyaki
Inside the chewy dough, you can catch a glimpse of the pleasantly bitter Nozawana. Oyaki is a taste of home that has been loved in the households of Northern Shinshu. Oyaki is a local food made using wheat and buckwheat in Northern Shinshu, a mountainous region where rice is difficult to grow. Its origins are ancient, said to have begun around the Nishiyama area of Northern Shinshu. Particularly in the snow-heavy Iiyama area, the 'Haiyaki' (ash-baking) method—where fillings like Nozawana, eggplant, or red beans are wrapped and slowly baked in the ashes of a hearth—is still passed down today. Its versatility is also a charm, as changing the filling allows it to serve as either a side dish or a snack. It is a simple, warm flavor, reminiscent of handmade food from a grandmother's kitchen. The lifestyle of the snowy region of Northern Shinshu is packed into every single piece.
