Hakuba Gibier
A carefully prepared dish featuring deer and wild boar harvested at the foot of the Northern Alps. This is the taste of gibier from the international resort of Hakuba Village. This movement originally grew from an initiative to utilize deer and wild boar—captured as a measure against wildlife damaging crops—as a local resource. In Hakuba Village, there are restaurants serving gibier and processed goods such as venison curry and deer leather accessories, resulting in sophisticated dishes unique to a village bustling with skiers and climbers. Throughout Nagano Prefecture, the use of 'Shinshu Gibier' is being promoted as a community-wide effort. With its robust flavor from the lean red meat and a low-fat, healthy texture, this is a blessing of nature that can only be tasted in Shinshu, where people have lived alongside the mountains.
