This movement originally grew from an initiative to utilize deer and wild boar—captured as a measure against wildlife damaging crops—as a local resource. In Hakuba Village, there are restaurants serving gibier and processed goods such as venison curry and deer leather accessories, resulting in sophisticated dishes unique to a village bustling with skiers and climbers. Throughout Nagano Prefecture, the use of 'Shinshu Gibier' is being promoted as a community-wide effort. With its robust flavor from the lean red meat and a low-fat, healthy texture, this is a blessing of nature that can only be tasted in Shinshu, where people have lived alongside the mountains.
