Kurobe Dam Curry

On the plate, rice shaped like an embankment towers upward. An arching wall of rice is surrounded by curry roux that fills the space like a reservoir—a dish that makes you feel like you're on a journey even before your first bite. The roots of this dish date back to the era of the Kurobe Dam construction. It is said to have begun in the early Showa 40s (late 1960s) when a head chef at a diner in Sengozawa shaped rice into the form of the dam, creating 'Arch Curry.' Eventually, it grew into a local gourmet specialty involving about 20 restaurants in Omachi City, leading to the creation of 'rules,' such as shaping the rice like an embankment and ensuring the roux is always poured around the outside. Some restaurants feature toppings that resemble sightseeing boats floating in the roux, making it visually delightful to look at and delicious to eat once broken apart. The moment you break into the dam with your spoon is truly exhilarating.
