Azumino Wasabi
When grated, it releases a refreshing, sharp aroma that tickles the nose. This is Azumino wasabi, nurtured by the blessings of the Northern Alps. The entire Azumino area is a major production hub for wasabi, where snowmelt from the Northern Alps emerges as underground spring water. In particular, the Daio Wasabi Farm boasts one of Japan's largest wasabi fields, spanning approximately 15 hectares. The pure spring water, maintained at 13–15°C throughout the year, grows wasabi that possesses a delicate sweetness and aroma hidden within its pungency. Nagano Prefecture boasts the highest wasabi production in Japan, with much of it coming from Azumino. Experience the profound depth unique to authentic wasabi, featuring a gentle sweetness that lingers softly after a vivid, sharp sting.
