Sanzokuyaki

A large single piece of meat coated in a garlic-infused soy sauce marinade. Crispy, juicy, and bold—this is Shinshu's specialty, 'Sanzokuyaki.' A local flavor beloved in the Chushin region, centered around Matsumoto and Shiojiri cities, with Shiojiri often cited as its birthplace. The basic method involves marinating a whole chicken thigh in a soy sauce base flavored with garlic and ginger, coating it in potato starch, and frying it until crispy. There are various theories regarding the origin of its name, such as a play on words between 'frying' (ageru) and 'bandits taking/snatching' (ageru) items; this sense of boldness suits the dish perfectly. A single piece of meat where juicy juices overflow from beneath a crunchy coating. It is an irresistible dish that pairs perfectly with both beer and rice.
