Ina no Zazamu
Take a pinch of this sweet and savory tsukudani and pair it with a sip of sake. This is 'Zazamu,' a delicacy of the Ina Valley that will impress even the most seasoned connoisseurs. 'Zazamu' refers to the larvae of caddisflies, stoneflies, and similar insects that inhabit the clear streams of the Tenryu River. They are collected using traditional fishing methods, involving entering the cold river in winter and flipping stones on the riverbed with specialized nets and hoes. To protect resources, fishing is strictly limited to the period between December and February, and only a very small number of people are permitted to fish. It is a precious food culture that remains only in the Ina region of Nagano. When prepared as kanroni (sweetly simmered), it becomes fragrant, with a unique texture and rich flavor that makes it the perfect accompaniment to alcohol.
