Romen is a beloved soul food of the Ina Valley people. It was created in 1955 by Kazuyoshi Ito, the owner of 'Chugoku-fu Saikan万里' in Ina City, in collaboration with a local noodle factory. The dish originated from combining steamed noodles—an innovation designed to extend shelf life—with locally raised mutton and abundant local cabbage. Available in two distinct styles—one enjoyed as a soup and the other like yakisoba—it is a quintessential taste of Ina households, allowing diners to enjoy it exactly to their preference.
