Toyama Jingis
When placed on the griddle, the savory aroma of the miso marinade sizzles and rises. The well-marinated mutton releases a burst of sweet and savory sauce and meaty umami with every bite, making it a perfect companion for both rice and alcohol. Toyama Jingis is a style of Jingiskan that has been cherished in Toyama-go, Iida, in Southern Shinshu. Marinating the meat in a garlic-infused miso-based sauce is a tradition truly characteristic of Shinshu, a region famous for its miso. A unique feature of Toyama is the variety available; in addition to lamb and mutton, there are 'Buta-jin' using pork and 'Tori-jin' using local chicken. Eating hearty portions of richly seasoned meat—it is an energizing dish from this mountain town.
