Miso Tendon
A glossy, sweet miso sauce flows over the tempura resting on a bed of rice. The mellow richness and sweetness soak into the crispy batter, making it impossible to stop eating. What defines the Shinshu Suwa Miso Tendon is its use of sweet miso sauce instead of traditional soy sauce. It is a bowl that truly represents Suwa, where miso production flourishes. Suwa's climate, characterized by significant temperature fluctuations, is ideal for making miso. In this land lined with large and small miso breweries, local restaurants pooled their wisdom in 2005 to create this dish. The rule is to top it with ingredients from the Suwa region, such as wakasagi (smelt) or river shrimp. Each shop has its own slightly different ingredients and miso sauce—making it a delicious flavor to explore through a food tour of Suwa's pride.
