Ueda's Kurumi Soba
Ground walnut paste is dissolved into the soba dipping sauce. When you dip the noodles into this thick, sweet, and fragrant sauce, it is simply irresistible. Kurumi Soba (walnut soba) is a representative specialty of Ueda. This method of adding walnut paste to the dashi broth is said to be an original creation by 'Kusabue,' a popular shop in Ueda, established in 1961. Using locally harvested walnuts that are ground and dissolved into the dashi, it is a bowl unique to the mountainous Shinshu region. You can enjoy highly aromatic 70% buckwheat noodles paired with the sweet walnut sauce, inheriting the traditional soba-cutting techniques passed down from Komoro. It offers a mellow mouthfeel that is distinctly different from standard light dipping sauces. It is a local flavor you must try when visiting Ueda.
