Umidare Yakitori

A thick, garlic-rich soy sauce is drizzled over freshly grilled skewers. One bite of the fragrant chicken and punchy sauce will make you crave more rice and alcohol. Umidare Yakitori is a local gourmet specialty originating from Ueda City, Nagano Prefecture. It is said to have been devised in the 1950s by Shozo Miyashita, the first owner of the local yakitori shop 'Torimasa.' The defining feature is the soy sauce-based sauce loaded with grated garlic, and it's fun to add extra 'oi-dare' (extra sauce) to your liking. In 2011, a group of local citizens named it 'Umidare,' incorporating three meanings: 'Oidare' (a call to friends in the Ueda dialect), 'Oishii Tare' (delicious sauce), and 'Oi-dare' (adding extra sauce). Registered as a trademark in 2012, this is a flavor Ueda is proud of. It is a dish that continues to be loved locally for many years.
