Sanzoku-yaki
When you bite into the crunchy coating, flavorful juices infused with garlic burst forth. There is no happiness quite like taking a hearty, large bite of this whole chicken thigh. Sanzoku-yaki is a local gourmet dish beloved in the Chushin region of Nagano Prefecture, specifically in cities like Matsumoto and Shiojiri. Chicken thighs are marinated in a soy sauce base flavored with grated garlic and onion, then coated in potato starch and fried until crispy. Interestingly, despite having 'yaki' (grilled/fried) in its name, it is actually a deep-fried dish. There are various theories regarding its name: some say it was called 'Sanzoku-yaki' because bandits would 'take' (toru) items, leading to a pun on 'frying chicken' (tori o ageru), while others suggest it was named to reflect the hearty, rugged eating style of bandits. Each city has its own specialty: Shiojiri focuses on 'bone-in chicken,' while Matsumoto uses techniques to reduce the aroma for easier takeout. It is the perfect taste of Shinshu for those days when you want a truly satisfying meal.
