When mentioning the representative fine sakes of Fukui, this name is always among the first to be raised. This is the sake of Kokuryu Sake Brewery, which has maintained its handmade traditions for over two hundred years since its founding in the first year of the Bunka era (1804). The name originates from the 'Kokuryu River,' the ancient name of the Kuzuryu River that flows beside the brewery. The brewing process utilizes the underground water from the same river; its light and soft characteristics produce a flexible and clear Ginjo sake. The brewery is committed to using only premium sake-brewing rice, primarily Yamada Nishiki from Tojo, Hyogo, and Gohyakumangoku from Ono, Fukui. Delicate, elegant, and possessing a gentle yet unmistakable presence. With every drop, its refined taste softly transforms the everyday into something extraordinary.
