Hegi Soba
Soba noodles beautifully folded into bite-sized portions and presented in a wooden container known as a 'hegi'. They glide smoothly down the throat with a silky texture. When you bite into them, a pleasant, firm chewiness responds. The cool, refreshing texture of this cold noodle dish is irresistible. Hegi Soba is a specialty born in the Uonuma region. The secret to that unique, slippery texture lies in using funori, a type of seaweed, as a binding agent. It is said to have originated from the idea of utilizing funori—which was traditionally used to tension warp threads in this textile-rich area—for making soba.
