Thick yakisoba noodles coated in a luscious tomato sauce. The combination of chewy noodles and sautéed cabbage entwined with tangy meat sauce makes for an addictive dish that is quintessentially Niigata. 'Italian' was created by 'Mikazuki,' which began as a traditional Japanese sweets shop in Furumachi in 1960. It is said to have started when they began promoting it as a 'slightly unusual yakisoba.' Inspired by Western-style spaghetti, they named it 'Italian' and served it with a fork. Nagaoka also has a version called 'Friend,' which is characterized by thinner noodles. Despite being yakisoba, it has a distinctly Western feel. It is a beloved local soul food that the people of Niigata absolutely adore.
