Otaki Bamboo Shoots
With a white and glossy appearance emerging smoothly from the earth—the bamboo shoots of Otaki are known as 'white bamboo shoots' due to their pale color, representing Chiba's pride as a seasonal spring delicacy. Otaki Town is known as the 'Village of Bamboo,' boasting the prefecture's premier production area with vast bamboo groves. Growing slowly in highly viscous, acidic white clay soil, these bamboo shoots are shielded from light and air, resulting in almost no astringency or bitterness. Because of this, they require no special processing to remove bitterness and can even be enjoyed as sashimi. The peak season is spring, and the experience of digging up your own bamboo shoots is also a popular activity. Quickly simmered to a fluffy texture—enjoying their soft mouthfeel along with the scent of the earth is a true springtime luxury.
