Splendid Alfonsino (Kinmedai)
A striking, vibrant vermilion color. When simmered, the sweet and savory sauce clings to the tender white flesh that falls apart easily, with the rich umami of the fat spreading across the palate—Splendid alfonsino is a true delicacy boasted by the seas of Boso. In Chiba, they are landed off the coasts of Choshi and Katsuura, where the nutrient-rich fishing grounds formed by the meeting of the Kuroshio and Oyashio currents produce fatty, flavorful fish. Fish caught using the 'Tatinawa' method—carefully line-caught one by one—suffer minimal damage to the flesh, guaranteeing exceptional freshness and flavor. Varieties such as 'Choshi Tsuri Kinme' from off Choshi and 'Sotobo Tsuri Kinne' from off Katsuura have been certified as Chiba Brand marine products. While the classic simmered dish is a staple, it is also wonderful as sashimi. It is a dish that allows you to savor the full bounty of the Boso sea.
