Shimonita Katsudon
When you open the lid, a glossy, amber-colored katsu sits prominently. The sweet and savory soy sauce glaze clings moistly to the crispy fried coating, creating an excellent harmony with the rice. Because it is not bound with egg, you can fully enjoy the aromatic fragrance and crunchy texture of the cutlet. Shimonita Katsudon is a dish where freshly fried tonkatsu is lightly dipped in a sweet and savory soy-based sauce and served over rice. It is a soul food of Shimonita, said to have already been served in local eateries during the late Taisho era. In restaurants founded as far back as 1937 (Showa 12), a secret sauce that has been replenished continuously since the founding creates a deep, rich flavor. A taste of the town, soaked in a continuous-use sauce. This is Shimonita's pride and joy.
