It is said that the name of this udon comes from the initials of its ingredients: "tsu"kune, "ku"ro (black) vegetables, and "ba"ra (pork belly)—forming "Tsukuba." The noodles are characterized by local wheat mixed with lotus root powder, and are served at various locations such as the Nakamise stalls in front of Mt. Tsukuba Shrine and tea houses at the summit. It is a local specialty that packs the essence of regional ingredients into one bowl. A bowl after climbing Mt. Tsukuba is truly exceptional.
