Ooba (green shiso) is a specialty product cultivated in areas such as the Kogota region of the Osaki district in Miyagi Prefecture. Highly aromatic and high-quality ooba is shipped to restaurants nationwide to be used as garnish or accompaniment for sashimi. Locally, it is also transformed into processed goods like shiso rolls, ooba tofu, and ooba konnyaku, becoming a familiar presence on people's dining tables. Its refreshing aroma adds a touch of coolness to any dish. It can be used in various ways, such as chopped and mixed into rice or fried as tempura. While it may seem like a supporting player, its presence is unmistakable—a dish is significantly different with or without it. It is a hidden specialty of Miyagi, nurtured by the Osaki region.
