Hiyashi Chuka is said to have been born in Sendai. It is told that in 1937 (Showa 12), Ryotei, a Chinese restaurant in Sendai, devised 'Liangbanmian' in an attempt to overcome declining summer sales. 'Ban' means 'to mix' in Chinese. It was named as a dish where cold sauce, noodles, and toppings are all mixed together.
