They carefully cultivate koji in small batches and brew slowly using the Akita-style long-term low-temperature fermentation method. They are also known as a member of "NEXT5," a group of young brewers in Akita, and are renowned for their meticulous craftsmanship. Its clean and clear taste does not overpower food. It pairs seamlessly with both Japanese and Western cuisine. This is a brand we highly recommend for those looking for the perfect sake to enjoy alongside a meal.
