Tonburi

When you take it into your mouth, the tiny grains burst with a popping sensation. Visually, it looks exactly like caviar. With its subtle bitterness and pleasant texture, Tonburi is an Akita delicacy known as the 'caviar of the fields.' It is made by heating and processing the mature fruits of the chenopodium plant (houkigusa). The grains are a pale green color, measuring about 1–2 mm in diameter. There are various theories regarding its name, but the most prominent theory suggests it is a corruption of 'touburiko,' derived from 'buriko' (the eggs of sandfish/hatahato). Processing is difficult, and cultivation continues primarily in Odate City even today. 'Odate Tonburi' is a one-of-a-kind flavor that has also been registered under the GI (Geographical Indication) system, where the government guarantees its origin and quality.
