Hinai Jidori (Hinai Chicken)

The more you chew, the more the intense umami and richness overflow. With a firm texture and an aroma reminiscent of pheasant, Hinai Jidori is one of Japan's three great chicken breeds, alongside Nagoya Cochin and Satsuma Jidori. Its roots lie in the 'Hinai Chicken' that has long inhabited the Hinai region in northern Akita Prefecture. It is a local breed so delicious it is said to have been paid as tribute (tax) in the past, and it was designated as a national natural monument in 1942. However, since natural monuments cannot be used for food, the breed was improved to preserve its meat quality, leading to the creation of 'Hinai Jidori' in 1974. It is a chicken that Akita is proud of, and an essential ingredient for the broth in Kiritanpo Nabe (hot pot).
