There is a legendary sprout grown solely with the heat of hot springs: Owani Onsen Moyashi. This traditional Tsugaru vegetable has been passed down in the town of Owani for approximately 400 years. Seeds are sown in holes dug in the soil called 'sawa,' and by using straw to block light, the soil is kept at about 30 degrees Celsius using hot spring heat, with cultivation relying entirely on hot spring water. It is a prestigious winter vegetable said to have been presented to the third lord of the Tsugaru Clan during his hot spring علاج (toji). Growing slender to over 30cm, these sprouts offer an exceptional crunchy texture, a unique aroma, and a distinct sweetness from the beans. With a powerful flavor unique to soil-based cultivation, this masterpiece has fans across the country due to its high quality. When used in dishes like ohitashi (blanched greens) or stir-fries, its wonderful aroma and texture truly stand out.
