Iwayado Yokan
When you peel back the bamboo skin, a gentle bamboo aroma rises. Take a thick slice of the heavy yokan. As it enters your mouth, a fine-grained, rich sweetness spreads slowly across your tongue, while its firm texture emphasizes the presence of the adzuki beans. This famous confection has been passed down for over 300 years in Esashi, Oshu, Iwate. It is said to have originated during the Enpo era under the patronage of the lord of Iwayado Castle. Its hallmark is a strong firmness and deep sweetness, achieved by kneading the mixture for a long time at high temperatures until it almost scorches. Wrapping it directly in bamboo skin allows the aroma to infuse and helps maintain the moistness of the bean paste. 'Hon-neru,' which tightly encapsulates the flavor of adzuki beans, is pure richness itself. It is a traditional taste of Iwate that you want to savor slice by slice, accompanied by strong tea.
